There’s a whole lotta people that say these Boss 351’s were the fastest small block Musclecars of the era.

Those 351 Boss motors were definitely one of the last hurrahs for the era. That 4spd "console" is the cheapest, most hideous thing I've seen in a while though..

One of Ford's minor mistakes I think when they stayed with the 302 in 70 instead of going with the 351 in the Boss Mustang. Would have loved to see that engine in the earlier body.

Agreed, but SCCA Trans Am wanted them for the 5.0L homologation rules blah, blah, blah

But Mopar had the right idea to do a de-stroke of the 340, thus keeping the extra inches for the AAR/TA street versions. Not sure why Ford didn't do the same. Can a 351 Cleveland be de-stroked to a 5.0L engine? With 1969 technology considered of course?

Yes, I would assume a de-stroked 351C would need a 3" stroke crank and new pistons to arrive at the 5.0L size. Rods are around the same length as a SBC. Heads flow more on the intake side, not sure about the exhaust. What a screamer...

a destroked 351 would be nothing more then a Boss 302 then. The Boss 302 had Cleveland like heads

True but the 1969-70 Boss 302 used a Windsor block. While the Boss 351 used the entire Cleveland, block, heads and all. So theoretically, Ford could have de-stroked the Cleveland block for the '70 Boss 302 and thus met homologation with the Cleveland in its entirety. Now if the 351C was not quite available at the start of 1970 Boss 302 production in late '69 (something tells me it wasn't) then that may explain why Ford never considered such a thing. And this is where we all disappear down the rabbit hole :)

There would be nothing to gain. Besides a longer rod. 8.200 Windsor VS 9.200 Cleveland deck.
The Boss 302 and Boss 351 used the same cam grind 227 115 477 Boss 351 had 3/4 of a point more compression. Same heads. I have built many of both. Boss 351 uses the big port Much better and there for has 60 more ft/lbs of torque. A basically stock Boss 351 with headers and a 750 Holley and some traction will run high 12s..
